My basil is out of control, so I decided to make half again as much pesto as I originally intended. I altered the amounts accordingly. Except, apparently, the garlic. That, I doubled. Now, I adore garlic - truly, I do - but the bite is overwhelming. Bleargh. I can only hope it mellows a bit in a few hours' time.

Farmer's market today! I bought more prettypretty eggplant, some red pears and fingerling potatoes. hee. 'fingerling.'

I love garlic, too. Whenever a recipe calls for, say four cloves? I add a full head. But this was hot and no little bit bitter*. ::meep!::

However, after letting it sit for two hours coupled with the application of heat, it was rather awesome. Still majorly garlicky, but in a full flavored way. If I could send some to you, I would. It's yummy.

*I recall having a similar problem when I made shrimp bruschetta. In that instance, I had the leisure to let it sit overnight, and it turned into sheer brilliance. This time, I only had about two hours of mellowing time. Still, all's well...
