As is usual when I'm being very mindful of what I'm eating, I'm hyper-focused on food.

Today, I made two recipes from the book recommended by ClubKO. Both were, I hesitate to say, really fracking good.

Lunch was shrimp coleslaw on multigrain bread. Dinner, broiled honey mustard ham steaks on creamy lentils with steamed broccoli. ZOMG!yummy.

I'm thinking tomorrow might be grilled chicken with barley. No clue as to what to do Tuesday. I'm home late from kickboxing, so something cold or something that could just be heated up would be brilliant. Ooo, and I have frozen shrimp that I should kick into the fridge, maybe do a lemon garlic rosemary (ish) marinade and then roast asparagus and add in whole wheat couscous for Wednesday. *ponders*

If anyone has ideas, especially for the quick turnaround on nights when I have the late kickboxing classes, hit me. Had to be low glycemic index. Preferably not a huge amount of fat, but despite My Number, I'm not sweating that so much.

Mmmmmm. I'm coming to your house for dinner!! heehee. How about a meal that you can make one night, that can be modified quickly the night when you don't have as much time, but adding an ingredient. I think Rachael Ray calls them Double-Duty meals. For example, you might have grilled chicken with a side of vegetables one night, and then the next night, you can cut up the leftovers, toss them in a wok, add a few seasonings, perhaps some rice or rice noodles and viola!

Oh, and...nice music choice. I love that soundtrack. : D
