As my last entry concerned falling behind in my workout/training schedule, I probably ought not post about the smashingly delicious shrimp risotto I made for dinner. And yet here I am. I'm bummed I forgot to add the fresh asparagus, but I have so much leftover that I'll just pop it in when I reheat it for lunch. Or breakfast. Or "what else can I take to goodnight_gracee's* shindig?"

In the interest of pretending it was a healthy meal, I added neither cheese nor cream to the risotto, and I started things off with a honkin' huge salad of mixed greens, cucumber and thinly sliced red onion with a tomato-herb vinaigrette.


*apologies to you, m'dear. Stupid LJ is refusing to make a link. buggering buggerness.

Sure! Bring some asparagus. We'll just grill it with the rest of the veggies and drizzle it with something or other... OR!!! I could pick up some prosciutto and we can wrap it around the tops of the asparagus and drizzle it with some balsamic glaze..! We'll think of something! Can't wait to see you!
